Seville Orange & Honey Marmalade

It's January and Seville oranges are in the shops with their wonderful bitter taste and wrinkly imperfect skins.  I've made marmalade for a long time with an old recipe which uses white cane sugar.  This year I have adapted the recipe substituting the majority of the sugar with our honey and the result is a bitter sweet marmalade which is even better than the cane sugar version.  A great way to start the day.  
Seville oranges are only in the shops for a couple of weeks so I'm on a mission to make as much marmalade as I can.  A real seasonal product preserved for the year with our wonderful honey.
